Sue Jones was originally a school teacher
and spent her free time keeping goats and making small amounts of cheese
for home use. This hobby was soon to take a serious turn when her husband
returned from work one day with four cows in tow. He was a TV journalist
and had just finished filming an item involving the cows when he was told
they needed a new home. The cows were a very rare breed called Red Poll,
a cross between Norfolks and Suffolks, also rare breeds.
As Charles Martell has made protecting
Gloucester cattle his quest, Sue Jones has made saving the Red Poll her
mission. One of her first actions was to move to a more appropriate location
and so the family purchased Cilowen Ucha Farm, Login in Whitland, Wales.
Here she began selling milk and making cheese. Busy raising two children,
Sue enlisted the help of her sister and together they made the cheese.
Llanboidy is probably the only cheese in
the world which is be made with the milk of Red Poll. The milk is similar
to that of Ayrshire cattle. It is higher in protein and has smaller fat
globules than Fresian milk, and is especially suitable for cheese. The
milk is not pasteurised. The texture of the cheese is firm but smooth
and silky and the flavour is buttery and herbal due to the flora of the
organically managed pastures. The strength of flavour varies markedly
with age. When young the cheese is mild but as it matures the flavour
becomes more robust and the rind becomes hard and dark. It can be matured
from two to ten months.
Sue now has thirty-three Red Polls in milk,
plus four Fresians and she now also employs two assistants.
Each cheese is approximately 30cm in diameter,
10cm tall, weighs 4.5kg and has a fat content of 48%.
